Here’s a simple recipe for making Limoncello at home:

Ingredients:

10-12 organic lemons
1 liter of high-proof vodka (at least 40% alcohol by volume)
2 cups (400g) granulated sugar
2 cups (475ml) water

Instructions:

Wash the lemons thoroughly to remove any wax or residue. Using a vegetable peeler, carefully peel off the zest (the outer yellow part) of the lemons, making sure to avoid the white pith, which can make the Limoncello bitter.

Place the lemon peels in a clean glass jar or airtight container.

Pour the vodka over the lemon peels, ensuring they are fully submerged. Seal the jar or container tightly.

Store the jar in a cool, dark place for at least 1-2 weeks. The longer you let it infuse, the more lemon flavor it will develop. Some people even let it
infuse for up to a month for a stronger lemon flavor.

After the infusing period is over, it’s time to make the syrup. In a saucepan, combine the sugar and water. Heat over medium heat, stirring occasionally, until the sugar completely dissolves and the syrup thickens slightly, about 5-7 minutes. Let the syrup cool completely.
