For Italians, eating eggs for breakfast is about as weird as eating Pop-Tarts for dinner. I still love my morning scrambled eggs, but I’ve also come to appreciate egg dishes throughout the day.

I'm spanish, eggs for breakfast is not really a thing for us either. I don't even know whether we have much of a breakfast tradition really, pan con tomate, a bocadillo perhaps, but for the most part breakfast will be sweet, a coffee with something quick or we may even skip it all together (I can't speak for everyone, but I'd say is quite generalised). But honestly, regardless, I've come to appreciate eggs for breakfast, or hearty savoury breakfasts from other cultures. Starting your day with eggs, good protein in general and veggies like this would probably be the way to go for health as well. I'm sorry Eva, but I might make this deficious meal for breakfast ❤😅
I'm making this for breakfast and I'll add some country potatoes. Lots of cultures eat eggs for breakfast, and I agree with Harper that it IS the most important meal of the day. Having protein in the morning will help get you thru lunch without feeling too hungry. I would love for you all to make some Southern US foods for breakfast: cheesy grits and eggs, sausage gravy with biscuits, etc. Your Italian recipes are great, but we also love to see Eva enjoying other cultural foods. Does she like sushi or Korean food?

Had rice+lentils in tomato sauce leftovers. Refried them and broke a couple eggs on top. You can make these dishes with anything viscous/granular enough!
