A nice little italian ragu dish, without tomatoes. Quick to make, delicious to eat. Tossed with grated grana padano. Remove the sausage meat from it’s casing. Fry it on some olive oil. Remove. In the same grease fry the onions, salted anchovies and garlic. Put the sausage back. Deglaze with white wine, add the chilli flakes. When the wine evaporates add some water. Simmer covered for 30 minutes. Add al dente cooked pasta and toss together with some grated grana padano. Salted anchovies are optional, here to give that depth of flavor.
