I threw the blade on my bucatini die and ran some gramigna, which translates to weeds. It’s usually made with Italian sausage. I made some Italian sausage with fennel, crushed red pepper, garlic powder, and salt. Cooked the sausage, blanched broccolini, then chopped it, sautéed onions, added a bit of tomato paste mixed with water, cooked it off, deglazed with white wine, cooked the wine off, added heavy cream. Cooked pasta, added some pasta water, toss pasta in and turn heat back on to finish cooking, added a bit more pasta water, turned off heat, and added grana padano. Super delicious.
