Grilled cheese and tomato salsa.
French sourdough toast 2 slices
4 slice of Gruyère cheese
3 slice of cheddar cheese
1/2 cup shredded mozzarella
1/4 of sweet onion
4 garlic cloves
EVOO salt and pepper
1 cup of cherry tomatoes
1 whole Campari tomato
1 cup avocado oil
Green oil
1 cup of basil leaves
I bunch of fresh parsley
1/2 hand full of spinach
Blanch herbs in boiling water first , then shock them in ice water . Strain all water then blend them with one cup of avocado oil
Bring it to a boil remove and strain it with cheesecloth.
Sauté the garlic and onions with olive oil first then add the tomatoes until the onions are translucent proceed add 1/2 cup of red with and Italian seasoning reduce the heat and let it cook til the tomatoes are soft .
Blend it then careful adding warm water as if it’s too thick and little olive oil.
Turn on your BBQ at low temp
on your toast add plenty olive oil salt and pepper on the face that’s going to be on the grill . Place your grilled cheese open face and let it be there for 10 minutes or until cheese is melted.
