It’s tender it’s really good for you so i can eat a lot of it and not have to feel guilty about it so today i’m showing you three of my favorite easy practical delicious and fast recipes so that you can incorporate more broccolini into your recipes so let’s just jump right into it
Just want to prepare some of the broccolini i think uh we’ve got to just take off some of the stem the dried out bottoms so just sort of line them up sort of like you might do asparagus these actually kind of remind me of asparagus a little bit
So i just want to divide into three bunches now one thing you’re gonna notice is i’m gonna try and develop as much char and flavor and depth caramelization to this broccolini as i can in all three recipes and the first one that we’re going to do is a lemony spicy
Garlic and oil type of broccoli sort of like alia olio the next we’re going to do sort of a soy lime inspired broccolini and then another one is going to be roasted in the oven and once they’re roasted grate a little parmigiano-reggiano on top and sort of
Create like a frico on top of them let’s start with the lemony garlicky spicy broccolini so i’m just going to take the broccolini and cut it in half and what i want to do is just take a look make sure there’s no stems that are drastically bigger than any other ones
And if there are then maybe just give them a little slice in half just so everything kind of cooks evenly we’re not going to blanch we’re really just going to cook it in a pan and try and develop that color so you wanna make sure when you’re cutting them
You don’t have any huge pieces that are not gonna really cook in the same time as all the other pieces so this looks good to me for the soy broccolini i’m gonna prepare it the same exact way just cut them in half make sure they’re relatively of equal size

Okay so for the first recipe we got the spicy lemony garlic broccoli chili flake some lemon cheeks two to three cloves of garlic thinly sliced in the broccolini and some olive oil and salt so let’s get these things cooking so i’m using this medium sized pan and i’m gonna preheat
It on medium-high heat if you’re cooking a lot more than i am use a bigger pan or two pans to ensure there’s some nice color and there’s no overcrowding but they will shrink as they cook creating more space once hot add olive oil to the pan add the broccolini get it tossed
And coat it in the oil manage that heat you want it hot season with salt and then just get all the broccolini to make contact with the pan and like a piece of meat let it be and let it sear until it develops color on that side if
It’s too crowded it’s going to be hard to achieve that color that we want You see this browning that transforms the flavor of the broccolini and to me it’s much more satisfying way of eating this once you get nice color and the broccoli is softening but still has some life to it add the garlic and the chili flakes a touch more oil
And mix it up you want to toast the garlic it’s not going to burn it’s just going to transform the flavor of the garlic and it’s going to work really well in this recipe make sure you have enough oil which is gonna be the vehicle to transfer that flavor of the
Garlic and the chili into the broccolini once the garlic is toasted and the broccoli is browned and nice and al dente squeeze in those lemon segments that’s gonna help finish cooking the broccoli check for seasoning and then it’s ready to serve for the soy lime broccolini we got a
Broccolini we’ve got our lime juice we’ve got another couple cloves of garlic sliced thin our shallots sliced thin red chili flake again and some white sesame seeds a little soy sauce and some sesame oil this recipe starts the same as the last recipe preheat the pan get it hot go in with
Some avocado oil this time and then in with the broccolini let it sear and brown and get some color and hold off on salting it for now now here’s where we deviate once the broccoli starts to add some color we’re going gonna add the shallots and now we’re gonna season it with salt
Not too much because soy sauce is coming in a bit let it caramelize and after a couple minutes and the onions start browning add the garlic and the chili flake toast the garlic once the garlic is toasted squeeze in half a lime a teaspoon of that sesame oil and a once
Around the edge of the pan with soy sauce and let it all come together and then it’s ready to go and then for the parmesan crusted roasted broccolini we’ve got our broccolini we kept it whole you can cut it if you really want to some olive oil some salt of course for
All of these things and some parmigiano-reggiano that we’re just going to grate on top once we’ve got nice color on it on a sheet tray spread out the broccolini coat in olive oil and season with salt toss it up spread it back out and get that into a 450 to 475 degree oven
And let that cook for about five to ten minutes before checking you see some color on them give them a flip move them around and then back into the oven for another five to ten minutes if the broccoli is not developing color or it’s not smelling roasty it means
Your oven’s probably too low and you want to jack it up once you see that the broccoli is getting that nice brown color that we like get it out of the oven and grate some parmigiano-reggiano and you really want to be generous with this get it all over the broccolini
As well as the bottom of the pan just make it rain and then back into the oven cook until the cheese is nice and crisp this is a little bit too pale back into the oven let it go a bit further still not there yet
This is what we want to see you can see the color is a little bit brown then it’s crisp let it cool a few minutes and then with the spatula scrape up the cheese and then plate it up See it’s still got some bite to it soft but still al dente it’s one of my favorite ways to eat broccoli right here i could just destroy the whole plate each one has a different flavor they all sort of look the same to you but they don’t taste the same so like if
I wanted to eat broccoli three different nights in the week i’ve got three different variations and there’s way more i couldn’t fit them all in one video so there you have it one ingredient three different recipes all plant-based i guess that’s not plant-based but you get the idea

I didn't know broccolini – or tenderstem broccoli as I better know it – was a hybrid. I'd always assumed it was just very young broccoli. It's delicious!

How to I clean/rinse the broccolini before searing it? Do I have to bring a couple of minutes before and rinse then dry? Would be great if you could give me some insight because having a wet vegetable takes away from the searing process.
I just made broccolini by roasting it in the oven with some olive oil and salt and pepper and then sprinkled with shaved parmesan. So damn good !!!🎉
