The flavour was absolutely amazing. I did smoke trout with lemon ricotta filling, touch of dill and lemon zest. But my technique is way, off am I rolling the dough too thin. I rolled to setting 3. The rest of the photos were me practicing at home. Little better but, I’m looking for that stiff structure. Cheers.
