Ingredients:
* 4 chicken thighs with legs, separated
* 2 artichoke hearts (quartered)
* Zest of 1 lemon
* Juice of 2 lemons
* 2 whole onions (sliced)
* 1 tablespoon flat Italian parsley (chopped)
* 2-3 tablespoons fresh oregano (or 1-1.5 tablespoons dried)
* 1 clove garlic (smashed)
* 1 bay leaf
* 1 teaspoon smoked paprika
* 1 cup chicken stock
* 2-3 tablespoons flour
* 2.5-3 tablespoons port wine
* Salt and pepper to taste
* Vito and Joe’s EVOO
How to Prepare:
1. Season the chicken thoroughly with salt and pepper
2. In a large mixing bowl, add flour, 1/4 tsp salt, 1/4 tsp pepper and stir well
3. Begin dusting each chicken in flour mix
4. Use cast iron pan, add 2-3 tbsp. Olive Oil to bottom then turn heat to High-Medium
5. Once pan is hot, place chicken in pan, turn till all sides are crispy brown
6. While chicken is cooking, start chopping onion and garlic, grate lemon zest
7. Remove cooked chicken from cast iron pan to set
8. Add chopped mix to cast iron pan and stir on low heat for about 5 minutes
9. Add lemon juice, artichoke, bay leaf, oregano, paprika, parsley and wine to pan then stir well
10. Begin adding chicken back onto the bottom of pan and place sauce mixture on top of pieces
11. Add chicken stock to pot
12. Adjust heat to Low-Medium then place lid on top of the pot for about 30-35 minutes
13. Plate chicken first then add sauce on top
14. Enjoy!

So today we’re going to basically make lemon chicken with artichokes and oregano time to prep the chicken we always want to season in layers I’m going to take my pink himan and then some fresh ground pepper so I’m going to season both sides of the chicken we’re
Going to use this to dust the chicken and I’m going to take my 3 tbspoon of flour I’m going to take about 1/4 teaspoon of salt and my black pepper take a drumstick and just give it a light dusting so I’m going to put about 2 to three tablespoons of oil in there
Obviously veto and Joe’s and I want to turn the heat up to medium to a high medium so I’m going to go ahead and just put that chicken right in there I want that crispy golden brown on the outside it’s been about 5 minutes I’m going to
Flip the chicken let’s get started on the onions we want the onions to almost emulsify as I cook it I’m going to grab a clove of garlic here give it a good smush we’re just going to give it a good smashing and it’ll kind of fall apart
And then give it a little cut I’m going to take some lemon Z I want the juice of both lemons and I’m good to go now I want to start cooking my onions my zest my garlic so I’m going to go ahead give that a nice stir let’s start add some
Chicken and some flavors I’m going to add my pork and my lemon juice my pppa my artichokes my bay leaf my leaves of oregano give it a nice stir my pars my back or chicken spread some of that across last but not least guys I like to
Have my stock seal that right up and we’re looking at about 30 minutes I’m going to Plate the chicken first and then what I’m going to do is just take the juices with the Ary chokes and the lemon take that last bit of parsley give
It a final dusting oh man that is good
