400g 00 Semolina
1 TBS salt
4 eggs

Put dry ingredients in mixer with paddle attachment, adding one egg at a time on low speed until incorporated. Once all 4 eggs are in, should have little balls of dough. Press into the bowl until a ball is formed. The dough can then be taken out, kneaded for a few minutes until cohesive ball. Wrap in plastic wrap to rest for an hour before making sheets. If using an extruder, don’t press I to a large dough ball, just use the dough as is with the tiny balls of dough.
