Made with standard 100 g flour to 1 egg, substituting 3 grams of beetroot powder from the flour to make the wine-colored dough, 3 grams of turmeric for the yellow, 3 grams of charcoal powder for the black, and spinach for green using 18% replacement by weight with the egg. The filling is blanched spinach, ricotta, sea salt, and black peppercorn. Keeping it simple.
