Made it like cacio e Pepe, using the Bain Marie method
1. Put a ladle full of hot pasta water in a glass mixing bowl
2. Cook 2 boxes of pasta. Once Al dente add cooked pasta to mixing bowl
3. add the cheese packets, pepper and whatever cheese you want (I used pecorino Romano and Swiss) and mix until creamy. Add pasta water if it gets to thick.

I’ve done something similar to this, but instead I added some broth from some home made soup. Very tasty!
