What you will need:
2 pounds chopped beef (chuck or round)
1 small loaf of stale Italian bread (If stale bread is not available, substitute with one cup of plain breadcrumbs and about 3/4 to one cup of warm water)
4 large cloves of garlic finely chopped
3 tablespoons of fresh Italian parsley finely chopped
1 1/2 cups of grated Italian cheese (Pecorino….etc.)
3 eggs
1 teaspoon salt
Oil for frying

I worked in an authentic Italian old world restaurant and we used two kinds of meat and milk in our bread…we also baked them and made the sauce daily…we made bread sticks by slicing pieces of the pizza dough and deep frying it adding garlic as soon as it came out… Out of this world…

Litttle story my fellow Eye-talian chefs regarding meatballs. I have the most incredible friend who prides herself on her meatballs. Had them, NOPE. Now respect tells us we never tell a chef their meatballs aren’t good esp when it’s a friend. Sadly, she does everything perfect, except- has this obligatory idea that the sauce should cook all day and evening. What I discovered is her meatballs are very grainy, or mealy. That’s better mealy. That’s because to cook that long, she’s rendering all the fat out of the meatballs, they literally are devoid of any fat at all/ healthy I suppose but they are so mealy. Same with Italian sausage. When overcooked in a hot sauce for hours and hours, you literally are cooking out all the flavor. I politely told her I think her sauce is very good but I don’t think you need to cook this for 8 hours lol. She told me she’s Italian she knows how’s to cook ‘da gravy’. So since then I shut ip, I enjoy the company and the meal for the most part so it’s always worth the visit but DONT OVERCOOK YOUR MEAT SO LONG THAT IT RENDERS THEM DRY AND MEALY. Ok story over
I learned from my mother and grandmother to use milk to soak with the bread in their meatballs recipe.
I make them just like you with the water bread cheese ect. I love the way you cook old school Italian 😍I made you Scrole and beans tonight delicious!🥰reminds me of my childhood I never actually made it myself! I usually make escarole soup with tortellini. You must have wine when you cook meatballs 🥰

What if you don't want to use eggs ? The meatballs still bind?
I now realise that I add the meatballs to the sauce too soon
Cooking too long could be why I don't get a soft mealball

You should use a tripod for the camera. Too much movement. I felt like I was on my ship during a storm.
My Mom grew up on 112 ( a hun12th) St on 2nd Ave in Harlem in the 1950's
. And yes, Macaroni & Gravy every Sunday "the macs are in the water, start getting ready for dinner" and we ate early on Sunday like 2 or 3pm. By 7 we would be hungry so had cold cuts. I just shape them round so not hard and I fry them as well, I love them plain fried too. And the Pork in the Gravy or beef, oh so good, Gets so tender. She used to go to the Butcher and ask for a piece of beef or pork for gravy and he knew.
And with plain white bread we would make gravy sandwich to taste, plus we we hungry waiting 🙂
Very nice. but instead of garlic why not use black pepper and fennel seeds. You'll find it more delicious . How about frying the meatballs in a frying pan .
These are Italian American meatballs. Nowhere in Italy will you fins giant meatballs. They're not made like the ones you're used to in USA. Guanciarle is their meat with pasta; not giant meatballs.

I soak my stale bread in milk but my recipe is the same recipe as hers.
And I have to say that I use more Garlic than some people like, but that’s how I know they are mine meatball and Gravy.
I always fry my meatballs with olive oil and about five crushed cloves of garlic to flavor the oil I fry them in.
Just the tomatoes! Bravo! Tried it that way once, and since then… well… you know. Same for the soup! Greets from serbia! P.S. A bit of an advice – don't worry about the seeds – they dissolve.

5:55 most people I know use milk too and I think it smells and tastes horrible when it cooks. It’s hard not to burn milk and it smells when you do. I use beef bone broth and it melts in your mouth.
