* 300gr spaghettoni * 200gr guanciale * 200gr pecorino romano * 2 whole eggs and 1 egg yolk * pepper
1. Cut the guanciale into strips 2. Finely grate the cheese 3. Mix the eggs and cheese until it becomes creamy 4. Cook the pasta, stirring occasionally 5. While the pasta is boiling, cook the guanciale until crisp 6. Remove the guanciale from the pan and add the cooked pasta into the fat and mix together 7. Take the pan off the stove and mix in the egg/cheese mix (add in a bit of reserved pasta water if it’s too dry) 8. Serve the pasta into plates and top with the guanciale, pepper and extra pecorino
