    – generous amount of olive oil, minced garlic (6-7 cloves) , shallots (75g) , and calabrian peppers in oil (40g), cook down for about 5 minutes
    – 1/2 cup vodka – hard simmer for a few minutes
    – tomato paste (full small can) – continue to simmer for a few minutes
    – 1.5 cup cream
    – butter (75g) , parm (75g) and pasta water (1 cup)
    – 400g dry rigatoni – slightly undercook noodles and finish in the sauce

    Recipe makes 4 big portions.
