Fresh mint leaves – pre-packaged at the store. About 4 to 5 sprigs.
Pine nuts – 1/3 cup.
Fresh garlic – 4 to 5 big cloves.
Lemon juice – 2 tablespoons.
Salt & pepper – as per taste.
Extra Virgin olive oil – as needed to make a paste.
Procedure: Assemble all ingredients into a food processor and process them until a your desired consistency. I like some bits of tomatoes in it for a good bite.
Note – you may add Parmesan cheese while processing. I didn’t add it because one of my family members is sensitive to it.
