One suggestion: when you add any kind of vegetables to the passata, from onions to basil to even more, you reduce the preservation time.
I know people use the passata even 2-3 years after, but the sad reality is that a well made passata (or pelati) should last max 1 year, 6 months with others vegetables inside it.
