Went fishing in Alaska a couple weeks ago and caught Sablefish. Finally made some with fresh tomato, basil, & white wine over squid ink pasta

    Recipe:
    2 cups fresh tomato pulp
    1 cup dry white wine
    3 garlic cloves minced
    Few basil leaves
    2 Pieces Sablefish (Black Cod)
    Parsley to garnish

    Score skin on fish and sear in pan. Set aside when half cooked. Add garlic and cook for 1 min. Add white wine and reduce to half. Add tomato and basil leaves and simmer. Place fish back in pan and cover for 5 mins. Cook pasta to al dente and set aside. Remove fish from sauce, discard basil and stir in pasta. Plate pasta and fish, garnish with fresh parsley.
