I know Pecorino would be out of the question, but Parmesan can work too. Some of the pasta water with the cheese and eggs makes a good sauce, then toss everything together.

Nothing Italian about this meal. Savvy shoppers would not buy sliced mushrooms. That's so expensive and lazy.
