I really enjoy italian food, and we will go to a 10 day trip to Italy on thursday. I want to get some original guancale and pecorino for my carbonara, because I had to use parmesan and hungarian bacon for this one. But it was delicious anyway. Can’t wait to eat everything in Italy!

    Carbonara is better with dry pasta because you need the starches from the pasta to make the sauce

    They look good. The fresh papardele looks really gorgeous! Here are some tips for you!

    – As everybody said in the comments, don’t use egg pasta with carbonara. You know, the taste will be too eggy. You can just find a recipe without egg or buy pasta from brands like la molissana or monograno.
    – This shape of pasta is good but carbonara goes better with spaghetti, spaghetto quadrato.
    – I know it is hard for you to find the right ingredients there in hungary but you can for example to make your own guanciale. If you live in the country side it is way easier. You just need pig cheek you can order from any butcher shop, the right combination of condiments you can find in any store, and you need to cure the meat, if you don t have the facilities to do that in the country it is not hard to find someone who can cure it for you or you can ask the butcher if he can cure it for you.
    -the cheese must be pecorino unfortunately, you can go with a mix of pecorino and parmigiano or grana but you need to have pecorino in your pasta. You can try to find pecorino at big supermarkets such as auchan, or italian shops.
    -never use cream!
