
I’ve been working on perfecting the real carbonara and the wife approved of this one. Egg yolks, pecorino, parm, black pepper and of course guanciale.
Would probably add more pasta water next time make it a bit more saucy, but it was delicious.

I cook mine with bacon, tastes a lot better imo, you should try it
