Spaghetti with eggplant and tomatoes

    📌 Ingredients

    spaghetti 300 g

    eggplants 2 pcs.

    tomatoes 400 g

    onions 200 g

    chili pepper 20 g

    basil 14 g

    garlic 1 clove

    salt ½ tsp.

    vegetable oil (for frying) 2 tbsp.

    📝 Preparation

    – Cut eggplants into squares, salt and leave them for 30 minutes. Then fry them in vegetable oil for 20 minutes, stirring.

    – Cut the onions into 4 pieces and cut into half rings. In a separate pan, fry in vegetable oil for 10 minutes, stirring with the chili pepper (do not chop the chili!).

    – Cut tomatoes into squares and add to onions, add sugar and salt. Roast for 10 minutes over medium heat, stirring.

    – Chop half of the basil finely, chop the garlic finely and add them to the tomatoes and onions. Take out the chili peppers and fry for 5 minutes.

    – Add this mixture to the eggplant chop the remaining basil, add the boiled spaghetti.
