Homemade pasta using the flour and water rav dough recipe. Chuck roast, carrot, celery, onion and white wine. Added a bay leaf or two.

    Here’s the recipe:
    I took chuck roast, seasoned with salt and pepper and seared it off in a heavy bottomed pot. Then I added carrots, celery, and onions in equal parts to the fat in the pan after removing the meat. I cooked everything until it was soft and added white wine and a Bayleaf. I added the meat back in, turned the heat way down and let it braise is for about three hours while covered. From there, I remove the meat and shredded it with a fork when it was ready, I cooked the pasta in a separate pot with water using the recipe below, and when it was just about finished, I threw the pasta in the pot with the sauce and a quarter cup of pasta, water, fresh chopped parsley, and a healthy knob of butter.

    Now please note, I read that there are some debate, whether or not there’s any tomato in the pasta Genovese sauce recipe. I added a small handful of cherry tomatoes which seems to be the consensus “what does nonna do” move.
