    Oh Amatraciana is my favourite! I also can never find Guanciale in my city..looks friggin awesome tho 👏

    Dice and render guanciale until crispy then remove, squish san marzano tomatoes and reduce in remaining pork fat, add pepper and chilli flakes to taste, cook bucatini to al dente and add to sauce, add pecorino to sauce then plate and top with guanciale, pecorino and chilli flakes.
