
Tried it a while ago for the first time and tried to so better this time.
2 beaten egg yolks (from my backyard chickies)mixed
Pecorino romano and parmigiano reggiano and pepper.
Pancetta baked with a bit of garlic and later all mixed together with a bit of pasta water.
Was not as creamy as last time, but still tasty. Need more practice 😀

Do you ever try doing this in a double boiler like a metal bowl on top of a boiling pot of water to control the egg better? I think another egg would work but whole, 1 whole and 2-3 yolk. And try different shape pastas since rigatoni is creative
