




I’ve been busting butt on making dried pasta this week. Lol! Ran through over 20lbs of semolina flour, and now 12lbs of gluten free flour, and 10lbs of whole wheat flour. I’m stuck waiting for the next batch of semolina to come in tonight!!!
Is it stupid how satisfying this is??? 😂😅😅

Nah not stupid at all. Love to have all that “in the bank” for whenever needed. Can I ask what your go to recipe is for a 00 and Semolina mix (I assume that is a combination you use) to get the pasta to hold their shape so nicely. I have an extruder though mine is a crank style so NO CHANCE I am cranking out a pile like you have!!

Not stupid, please teach me your ways. What kind of pasta machine do you use? do you freeze them right after? How long does it last?
Wow! Hubs bought me the Avance for Christmas one year but so far I’ve only made pasta for ourselves and as random gifts for people! This is next level! Well done!
Nice work. How are you drying your tubular/enclosed pasta shapes? Don’t they contract and crack during drying?
No it’s not stupid at all it’s called passionate . And nothing more gratifying than making some by hand and homemade . It use to be a common thing . Keep it up . If it was nit for people like you it would be a lost Art . Seriously … looks wonderful . Which you were my neighbor! I love semolina!

Yours, looks much better than his pasta…and you seem to be using a much more “basic” method to dry out.
