This is the most wonderful frosting you will ever make… It is fluffy and light… you are going to love it! I found this recipe years ago in the Warren Brown’s Cake Love book. One of my treasures.

Ingredients:
5 large egg whites
1 + ¼ cup extra-fine sugar
¼ cup water
1 pound (4 sticks) unsalted butter
1 to 2 tablespoons of your favorite flavoring extract

Separate the egg whites and place in to the mixing bowl. Start whipping to form a merengue.

Leave the mixer running while preparing the syrup. Mix the ¼ cup water with 1 cup of sugar. Place the thermometer inside the pot with water and sugar, let it become to a boiling to 245ºF.

Add the ¼ cup of sugar to the merengue.

Start adding the syrup to the merengue… slowly and patiently…

Once you finish pouring the syrup, beat for an additional 3 to 4 minutes until the merengue is cool.

Add the butter one tablespoon at a time. Once you finish adding the butter, add the flavoring, and whip fpr an additional 2 minutes.
