Italian Pasta Bake with Eggplants | Sicilian Recipe
Ingredients:
โข 320 g of rigatoni pasta (11.3 oz)
โข 2 eggplants
โข 600 ml of tomato puree (2 cups + 1/2 cup)
โข 1 clove of garlic
โข 6 basil leaves
โข 300 g of mozzarella (10.6 oz)
โข 70 g of grated Parmesan (1/2 cup)
โข 2 tablespoons of extra virgin olive oil
โข salt to taste
โข vegetable oil for frying q.s.

Bake the pasta at 355F (180C) for about 30 minutes.
