1) Mediterranean Pasta – Each mouthful an experience! Pasta in a Cheesy Bell pepper Sauce, Mediterranean Style. Licoidali is a variety of Italian pasta that’s quite similar to the rigatoni. It’s larger in size and the ridges help retain the sauce for a better eating experience. This recipe has a tomato and bell pepper sauce with Pecorino cheese for an amazing flavour. The sauce also stays inside the pasta making each morsel a tasty delight. It’s made with zucchini and eggplant that’s fried in olive oil. A delicious vegetarian recipe.
2) Eggplant Rigatoni – Made in around 20 minutes, the ultimate comfort pasta meal everyone loves. If you like pasta Puttanesca or alla Norma then you will love this. It’s very cheap to make, incredibly delicious and perfect to bring to the table on many occasions. Great for vegans and vegetarians too! (Minus the anchovies) It’s usually a great summer dish when the eggplants are in season, and I’m big on cooking seasonal but of course these days they are available all year round. The flavours of this recipe are intense because of the fried eggplant which is the hero of the dish. They are usually fried in seed oil but as we all now know, seed oils are very unhealthy so I opt for virgin olive oil. Olive oil doesn’t heat as hot as seed oils but still hot enough to brown the eggplants without smoking. I prefer to use the slated capers as they hold a stronger flavour, you can however use the capers you like. Mixed with the olives and the anchovies, this dish comes to life. Cook this rigatoni alle melanzane today and bring it to the table for the people you love.
3) Spicy Eggplant in Olive Oil, a delicious Italian antipasto that any eggplant lover will enjoy. It’s basically spicy pickled eggplant that’s often used as an antipasto, perfect with cold meats or cheeses. This recipe is an old fashion style, and very versatile. Use it for toasted sandwiches or panini. Great on pizza toppings, in pasta sauces, stuffing, frittata , topped on your parmigiana, grilled steaks, chickens etc. Make Marinated Eggplants today and always keep a jar in the fridge. Also known as Melenzana Ali Olio.
4) Eggplant Rollatini – Also known as “Involtini” which was originally made using pounded veal slices instead of the eggplant. This vegetarian version was used for the no meat days and makes a great vegetarian dish. Similar to a cannelloni, you can add your own touches or fillings to this gluten free meal. A gluten free cannelloni with eggplant.
5) Eggplant Parmigiana – Parmigiana is presumably a Southern Italian dish basically made with fried eggplant or aubergine, cheese and tomato sauce. There are a lot of variations and I learnt this one from an Italian Michelin star Chef known as “Pepe” on my recent travels on the south coast of Italy. It’s a delicate and very tasty dish showcasing the true Italian flavours. Melanzane alla parmigiana.
6) Spaghetti Melanzana Fritta is a delicious and easy to make eggplant pasta dish. The eggplant is sliced and then fried in olive oil until golden brown. It is then cooked with a little water and garlic until it breaks apart. It’s then then tossed with the spaghetti for a thick tasty sauce. This dish is perfect for a quick and easy weeknight meal. The eggplant gives the pasta a slight sweetness, and the fried caramelised flavour brings it to a whole new level. The eggplant part can be made ahead of time and reheated, or it can be served immediately. This will also intensify the flavour. Either way, it is sure to be a hit with your family and friends. A cheap to make, meatless pasta meal. So go ahead and give Spaghetti Melanzana Fritta a try! You won’t be disappointed.

Joel fabulous video. An Italian woman taught me this eggplant recipe long ago. Slice the eggplant into rounds just over a half inch thick brush with mayonnaise dip in breadcrumbs, season both sides with salt pepper garlic and oregano place 400° oven on a baking sheet with parchment paper bake on the center rack approximately 25 till golden. No need to flip. It taste like fried eggplant but without all the oil. A lot of times I’ll top it with chopped tomatoes shredded mozzarella throw it back in the boiler room just till the cheese is melted and to be fancy maybe add a nice sautéed shrimp on the top. And I’m sure you already know eggplants with more of a round hole on the end have less seeds than those with a slit. Much love 💋

That eggplant & Zucchini recipe looks darn simple and good!
This time, I'm confused about arranging the recipes, they are all stunning because of the eggplant, it is a real magician.. every recipe it can turns it into something fantastic, but I will try to arrange as much as possible…
1. Mediterranean Pasta because it contains eggplant with red bell pepper, It's my favorite mixture.
2. Eggplant Rigatoni, because of the eggplant is the hero in this dish.
3. Spicy Eggplant in Olive Oil, because I'm definitely a big eggplant lover.. and I loved the way you peeled it, It's like my mom used to do and It makes it looks elegant.
4. Eggplant Rollatini, it's so great vegetarian dish and full of cheese.
5. Melanzane alla Parmigiana, It's super cool recipe.
6. Spaghetti Melanzana Fritta, here, the eggplant actually looks like meat, but it's even tastier.
