Growing up in an Italian household, artichokes were a staple and baby artichokes were a treat! Laura has mastered this recipe and these artichokes come out soft and delicious every time – so flavorful. Enjoy
Baby Artichokes – Italian style
Ingredients:
• 2 lbs. baby artichokes
• ¼ cup extra virgin olive oil (EVOO)
• 1 clove garlic, minced
• 2 cups (500 ml) chicken or vegetable broth
• 1 TBSP dried or fresh parsley
• 1 TBSP dried or fresh oregano
• Salt & black pepper to taste
• Optional: bowl of lemon water (i.e. 1 liter of water with the juice of 1 lemon)
Process
• Wash the artichokes then clean them by removing a couple layers of outside leaves as they will be tough. Then, cut the tips off the top, and then cut the baby artichokes in half (in quarters if they are a bit bigger)
• To prevent them form discoloring, as you cut them, place them in a bowl with your lemon water
• In a large frying pan, add the EVOO and the garlic – sauté for 30 – 60 seconds
• Drain the artichokes and dry them a bit – place them in the pan and toss to coat them with the garlic oil. Fry on medium/low heat for 5 minutes
• Add salt and pepper to taste and toss to combine
• Add your broth, parsley, and oregano – toss to combine. Place lid on pan, bring to a boil, then continue to cook but on low heat (with lid on) for 10 minutes.
• Then gently toss them again to combine and place the lid back on for another 10 minutes, cook on low heat.
• Then toss them again, gently (as they will be soft now). At this point, they will be basically cooked, but we now need to fry them for 3 – 5 minutes, with the lid off – this will also allow for any remaining broth to be evaporated and more flavor to develop.
• Remove and serve – enjoy (you should be able to eat the entire baby artichoke)

Thanks-I've never cooked artichoke but will have to try this.
They look interesting, they would be fun to serve.
