Line a large cookie sheet with parchment paper!!
Preheat your oven to 350 degrees
Bake for approximately 45 minutes
Ingredients:
6 large or extra large eggs
1cup egg whites
1/3 cup of any type of low, fat milk
2 cups of arugala / spinach mixture
1cup of vidalia onion or any kind
1cup of mushrooms
1cup zucchini
2tsp crushed garlic
4tbs of Romano / parmasean blend cheeses ( can use any kind of low fat cheeses) 2sp
15 Slices of Butterball turkey Slices 1sp
1/2 tsp if Italian seasoning
1/2 tsp smoked paprika
1/2 tsp onion powder
1/3 cup of Great Value shredded cheese blend 3sp
Salt and pepper to taste
Directions :
In a skillet on a medium to high temperature spray with olive oil spray. Allow to get hot
Add chopped onions and mushrooms
Once sautéed add crushed garlic
Then add zucchini add chopped up arugala / spinach mixture
Once all is soft place in a bowl to cool and set aside
In a, large bowl add eggs, egg whites, milk, spices and Romano / parmasean cheese and whisk
Add vegetables to egg mixture and whisk
Place mixture on the cookie sheet and then add turkey pepperoni and cheese blend on top 😋
Bake and cut into Slices!! Eat immediately or keep in the fridge for up to five days in a sealed container!!!
