  2. 1: Cook Spaghetti. 2: Sear Guanciale. 3: Grind Pecorino and mix with egg and pepper. 4: Toss it all together with some pasta water. 5: Enjoy perfect Carbonara that is creamy and delicious.

Man if it wasn't for this channel I'd still be naive and unaware of the magical word of authenticity, Cooking and learning Italian food really taught me how to respect different culture's cuisine, I have been sharing the real authentic pasta's to my family members and it feels like I am spreading the word of God. Italian food is truly magical.

  7. Vincenzo's disappointment was so great that I have the sudden urge to make carbonara as an apology. How Nick did it sounds more complicated than the Vincenzo's version. Usually you do that kind of thing as a shortcut… not make the recipe more complicated!

  8. A Carbonara has 6 ingredients: Spaghetti, Guanciale, Pecorino, Egg yolk, Salt and Pepper. My kids do love the false carbonara with bacon instead of Guancale, Grana Padono instead of Pecorino, freshly grated nutmeg and cream but this is not a carbonara. It is a false carbonara with some inspiration by carbonara. We call it Papa’s carbonara knowing it is not the true one hehe.

  9. Man, that is abomination. Most of the modern food-bloggers are focused more on the entertainment instead of actual cooking techniques and recipes. In all that noise they "create" you can easily miss the point & mistakenly think THIS is an Italian dish which it obviously is not.
    I really appreciate what Vincenzo does protecting the real Italian cuisine and culture. As well, as I'm sorry that we live in a world where no one takes any responsibility dishonoring the culture. Don't get me wrong: there's nothing criminal not to follow some original recipes or whatever the case may be. But c'mon, put some disclaimer that it's just for fun, for the entertainment purpose only and we're good. Ugh, the world is broken 😞

  10. I will say this, as an Australian Americans absolutely ruin Italian culture and the ingredients they add! Like what the F??? Australian culture remains true to Italian food. That kid is just a poser. Love from Canberra Vincenzo! Your food is 10/10

I've been eating and making Italian food at least twice a week since following your channel, I watched your Alfredo recipe.,i can't seem to get my parmiganno reggiano to melt into a cream when making it, the parmiganno won't fully melt, have I let my pasta cool too much?

  15. Vincenzo, when he adds the garlic, don't add music, it takes away from the comedic style of the video! Keep it mute, and let your reactions do the talking! Having dynamic between long pauses and Italian music in between to create a dynamic comedic experience
