You will need the following ingredients:
8 oz of dried pasta ( I used linguine because I like the texture and the way it holds the sauce)
1 small onion chopped
2 to 3 cloves of garlic Minced
1 to 2 tsp of capers
1 to 2 tbsp of olives ( your choice)
2 to 3 fillets of anchovies (packed in oil not salt)
1 to 2 tbsp of crushed red pepper flakes
1 to leaves of fresh basil ( optional) I omitted it from mine
1 to 2 cups of pasta sauce or diced tomatoes
2 to 3 tbsp of extra virgin olive oil
salt and pepper to taste
First bring your salted water to a boil and cook the pasta according to the directions on the package.
to prepare the sauce heat a large skillet on medium heat and add you olive oil. then saute your onions until they are soft and translucent. Then add your anchovies and break them up into small pieces as you stir the onions. Next add your capers, red pepper flakes, and basil torn into small pieces. stir continuously until the garlic is golden brown then add your tomatoes or sauce until everything is combined.
Now you are ready to add the pasta. You can drain it if you want but I just added mine directly to the sauce because the extra pasta water will help the thicken it.
Once you add the pasta lower the heat and let everything simmer until most of the liquid is gone stirring it continuously so that it doesn’t stick or burn so don’t walk away from it.
After it is done to your liking add salt and pepper and serve immediately topped with your favorite cheese, I used Romano : )
