Everyone loves pesto, but most of us have only tried the basil-based “Pesto alla Genovese.” It’s one of my favorite things to eat, so Eva decided it was time I learned about some OTHER Italian pesto recipes… and I’m really glad she had the idea…
Today she’s sharing how to make the perfect basil pesto, plus a few other pesto variations you might want to try!

Ever get KFC chicken and put pesto sauce on it? It's so much better. KFC should have pesto sauce available at all their restaurants for a dipping sauce. I bet that bread pesto would be great on their fries too. And pesto on garlic bread, simple and perfect for a midnight snack.
Try any of those recipes on fry bread also known as quick bread or bannock fresh from the oven. Bannock is like pizza crust but there's less air in the dough so it stays flat and more dense instead of rising full of bubbles like regular crust, otherwise it tastes pretty much the same.
Eva, the look you gave to the camera at 6:14 is priceless. "Yep, I know it's great. Welcome to my world." That's the look you gave us.
Some ricotta (HOMEMADE), some pesto (HOMEMADE), some bread (HOMEMADE)! What is not to adore?????

This makes me want to try the mortar and pedestal methed when I make another rocket, garlic pepitas seed, roasted poblano chilies and completely cooled down.
Is there any chance you can explain to me how come I can't get that big ass garlic in Texas? I live in Austin and once-a-year I can find the big garlic
Always nice to see a pesto being made using a mortar, and thank you for mentioning why not to use a blender. It's a mistake I see way too often.
Should we toast the pine nuts first? I see that sometimes in other Pesto recipes.

Mmmmmm, belisimo. Looks delicious.
Another reason to use the mortar and pestle – the mortar actually crushes the vegetable cells, so you get far more flavor. A blender chops into tiny tiny bits, but does not crush the cells in the same way.
What brand of olive oil are you using?

This summer I was in Sicily and I had pesto alla pistachio. I was very surprised how good it was.
When I was growing up , there was an advertisement on TV about keeping and old Italian granny in the broom cupboard and taking her out to cook your pasta dishes lol sounds abusive now …
But clearly Harper has a "Sexy modern day" Italian he does not need to keep in the broom cupboard, who blesses him with delicious dishes and he gets to share her with us …

I absolutely love pesto alla Genovese, but unfortunately I'm allergic to pine nuts. It's the only seed or nut that I'm allergic to. What would you suggest as a replacement for pine nuts?
My cousin's wife is Mexican from Oaxaca. The indigenous peoples of Mexico, the Mayan and Aztecas were making salsa thousands of years before the Spanish arrived. Most of the food traditions of Mexico are indigenous. So salsa wasn't a Spanish introduction.

I'm right there with Harper; pesto alla genovese was essentially what I was introduced to many years ago and I fell in love with it. Apparently (also just like Harper) I was sorely misinformed about what pesto actually IS. The point about blenders/processors unintentionally cooking the ingredients is a critical point that I'm honestly a bit ashamed didn't occur to me the last couple times I made some pesto.

the only thing I'm unsure about is the wooden pestle, personally I prefer the stone one, I don't know if the wood absorb and release the moist of what you are making in the mortar
