Authentic panini recipe

Sorry, I’m new here and thought I’d put an explanation, clearly not!

The type of bread I am looking to recreate is like the sandwiches they serve here:

I’ve been a few times and love the simplicity of this style of bread. When I’ve tried to Google it I get ciabatta recipes or british style panini bread which isn’t what I’m looking for.
