    Lampredotto is a Florentine dish, made from the fourth and final stomach of cattle, the abomasum, a tripe-lover’s delight.

    (Not only is it not Italian-American, in keeping with Rule 3, but the abomasum is not even allowed to be sold for human consumption in the US.)

    looks great. If you liked this you should go to sicily and try a spleen sandwich at Porta Carbone in palermo 🙂 Or a tripe sandwich in Rome at mordi e vai!

    One of the most underrated Italian food even by Italians, I’m not crazy on animal organs but this is pure heaven. I feel so stupid to have tried it only at the age of 37.
