


Spätzle are a kind of Gnocchi made from spinach.
The dish is made by grating the spinach paste right into boiling water.
As for the sauce, it is made by roasting small slices of either Guanciale or Speck and then adding some cooking cream in the same pan, in this way you can make sure that the fat of the meat mixes with the cream.
Eventually as soon as the Spätzle start floating (which usually takes no more than 2 minutes), they are put in the sauce pan and the whole thing is mixed together.
It is one of my favourite dishes and maybe one that I feel is unknown or overlooked by most people both in Italy and abroad.

Very nice! Though, in my family we use Gorgonzola and not cream.

Just to shed some light: OP does not mean potato gnocchi. There is no potato in these, but just egg and flour (and maybe a little water or milk).
