Half Italian from the UK here. Knocked up a quick ragu this afternoon to serve for dinner tonight with some Rigatoni.

Sautéed finely diced red onion with garlic, Oregano, fennel seeds, salt and pepper.

Added diced pork, cooked until browned, 2 glasses of homemade red wine, 4 cans tomato pulp, squirt of tomato puree and a slack handful of Basil.

It’s been simmering approx 3 hours so far.

I’m anticipating good things!!! Wish me luck.
