Ingredients
1.2 kg bone-in chicken thighs, breast, wings or drumsticks
1 tablespoon oil
6-8 cloves garlic, crushed
1½ teaspoon brown sugar
2 bay leaves
2-3 small potatoes
1 large onion, sliced into rings
Ingredients for marinade
1 cup (250ml) Filipino cane vinegar or white vinegar
1 cup (250ml) soy sauce
¼ cup (65ml) freshly squeezed calamansi, lime or lemon juice
🇮🇹 Hunter’s Chicken ( Pollo alla Caciatora )
Ingredients:
800g – 1kg bone-in chicken
1 rib of celery, fine diced
1 carrot, fine diced
1 onion, fine diced
1 garlic, minced
1-1½ tablespoons rosemary (fresh or dried)
1-1½ teaspoons thyme (fresh or dried)
2 bay leaves
4 sage leaves (1 tbsp dried)
150g white / red wine
1 tablespoon tomato paste
200 -300g tomato sauce
½ cup chicken broth
salt and pepper
a handful of parsley
🇰🇷 Korean Fried Chicken
Ingredients:
For the Chicken
1 kg chicken wings, a mixture of wingettes and drumettes
1 teaspoon salt
1/2- 1 teaspoon pepper
1-2 cloves of garlic, grated or minced
1-2 eggs
1/2 cup corn starch
1/2 cup potato starch
1-2 tablespoons water
For the honey butter garlic sauce
60g unsalted butter
1-2 cloves of garlic, grated or minced
1/8- 1/4 cup brown sugar
1 tablespoon soy sauce
1 tablespoon honey (or maple syrup)
sesame seeds
For the sweet and sour spicy sauce
1 clove garlic
2 tablespoon cooking
fresh or dried chili
1 teaspoon mustard sauce
1-2 tablespoons spicy sauce (or Korean paste)
1 1/2 tablespoons soy sauce
2 tablespoons honey (or maple syrup)
2 tablespoons brown sugar
1 tablespoon rice vinegar (japanese mirin, Rice vinegar for sushi)
sesame seeds
🇯🇵 Orange Teriyaki Chicken
Ingredients for 2-3 people
for the sauce
20g black soy sauce/ japanese soy sauce
30g white wine/ Japanese sake
20-25g brown sugar
1 orange (50g fresh orange juice)
for the chicken
3-4 boneless chicken thighs
salt
1 teaspoon of cooking oil (optional)
– use nonstick pan
