INGREDIENTS

For the salad:
100g purple cabbage
1/2 fennel
1/2 apple
1/2 red onion
1 tsp white vinegar
1 tbsp oil
salt and pepper

For the meat:
200g roast beef
1 tsp clarified butter
1 tsp mustard
1 tsp green pepper
150ml cream
100g cheese
Salt to taste

METHOD
Slice the purple cabbage, fennel, half an apple, onion and mix everything with a spoonful of white vinegar, oil, salt and pepper. Sauté the garlic and sage in the butter. Take 200 g of roast beef and brown the meat in clarified butter for 5 minutes on each side, set the meat aside.

Prepare the sauce by adding butter, mustard, green pepper, cream, cheese and salt, boil the sauce for 5 minutes. Cut the meat into fairly thin slices and proceed to assemble the sandwich. Cook it in a pan.
