For The Meatballs And Soup:
🔹 ¾ cup torn pieces of fresh sturdy bread, crusts removed
🔹 ¼ cup milk
🔹 4 ounces ground beef
🔹 4 ounces ground pork
🔹 1 small egg, lightly beaten
🔹 ¼ cup freshly grated Parmigiano-Reggiano cheese
🔹 1 small clove garlic, minced
🔹 2 teaspoons finely chopped fresh flat-leaf parsley

🔹 5 ounces raw chopped escarole or baby spinach leaves; about 5-6 cups
