Fried Sage leaves are a super tasty appetizer and very easy to make! In Italy, this recipe is particularly popular in Tuscany, and it is an excellent way to use the sage in our gardens.
I love to prepare sage chips for my friends and family and serve them during my holiday aperitif: paired with a good beer or a glass of wine, fried sage is absolutely delicious!
The recipe is simple: the sage leaves are battered in a mix of beer and flour, then deep fried into olive or vegetable oil: simple and tasty!

INGREDIENTS
40 – Sage Leaves
1 QUART (1 Liter) – Olive or Peanuts Oil
1.5 CUP (180 g) – All-Purpose Flour
1 CAN – (350 ml) – Light Beer
1 TSP Table Salt
INSTRUCTIONS:
BEER BATTER
– Pour the beer, very cold, into a bowl.
– Pour the flour over the beer, and mix until consistent and homogeneous.
– Add 1 tsp of salt and mix a little more.
PREPARE THE SAGE LEAVES
– Now, rinse the sage leaves.
– Then pat dry the leaves very well.
– After that, pour the sage into the beer batter and mix well.
– Finally, store the bowl in the fridge for 10 minutes, covered.
FRIED SAGE CHIPS
– At this point, pour the oil into a pot, big 5-quarts at least.
– Heat the pot until the oil reaches 340° F (170° C)
– Then, deep fry the sage leaves, picking them from the beer batter with tongs and frying them a few leaves at a time.
– Once golden and crispy, raise them with a slotted spoon and let them rest over kitchen towels to dry the oil in excess.
– Finally, salt to taste if necessary, and serve immediately!
