Spent some days in Sicily and was thrilled Trapanese to taste (and learn about) trapanese pesto *and* busiate pasta. I think it was a first for both.

I didn’t have a bad meal in Sicily, but I think my first dinner was my favorite. It was from a restaurant in Palermo with the pesto Trapanese and eggplant. My wife couldn’t join, so I recreated it for her when I got home. I’m including the recipe below, in case you’re interested! **Recipe**

3 medium cloves garlic
Kosher salt
40g blanched almonds
20g pine nuts
4 sprigs of basil, weighing appx 25g
450g plum tomatoes, peeled and seeded
1/4 cup (60ml) extra-virgin olive oil, plus more as needed
1 eggplant, roughly chopped and fried separately
500g pasta (busiate)
