  3. I've only cooked fish a few times and I try to only just cook it so it stays moist and flakes easily!
    Watching the fish as you touched it with the fork and seeing it flake to my eye looked to be perfectly cooked.
    That Napoli sauce with fish and pesto must have been magnificent tasting.

  4. Morning, and you chef J.P. already filled my day with joy. Thank you again. Although I'm a little suspicious of your "buttery tomato sauce" I think I'm going to try it anyway. Not that I'm afraid it won't be delicious – only… I really have this "Japanese" tendency to give good ingredients the front of the stage, and good tomatoes are (and should be!) the star of the show. But…. I'll try alright. Thank you again (and again and again) for your cooking spirit. It's intoxicating.

    I followed your directions 100%.
    I used close to 5lbs of cod fish
    I Served 9 people (with a side of saffron risotto) it came out
    AMAZING !!! I've been watching cooking shows my whole life ( I'm 64 ) . And have learned more and have become more confident in my cooking skills from you than all the other chefs combined .

  7. This looks like an amazing sauce that could be used with various different proteins to add brightness to a plate. Here in England it is the coldest part of the year so not ideal for buying tomatoes. We grow as many as we can in summer so that we can freeze those we don’t eat and enjoy them during winter. I note that Chef mentioned that he had struggled to find decent tomatoes in Fort Lauderdale, is there no kitchen garden/potager close to base? Does the climate allow you to grow tomatoes locally year round? Just curious! Many thanks for another great recipe. 💐

  9. I always cook my meatballs in olive oil and butter, then pour all that in the sauce with the meatballs.
