    Guanciale is good, but anything yielding pork fat works too. Bacon, pancetta, I can’t see why pork belly wouldn’t work either.

    Wow. Looks delish! Only problem is there’s not enough 😂

    The portion is on par with how they do it in Rome though, since the pasta is eaten before the main dish.
