My go-to pasta dish. Spaghetti cooked with shallow salted water (less water helps make the pasta water thicker) with garlic, olive oil, anchovy fillets, crushed red pepper, lots of parsley and Parmesan, then a squeeze of lemon juice. Very sorry to the Italian cuisine purists…
This evolved out of many failed attempts at trying to make aglio e olio. It always just turned out bland for me, but the journey has given me one of my all time favorite dishes 😋
The ingredients sound authentic enough. Variations aren’t illegal in Italy 😉
Looks good mate.

Just don’t pretend it’s something traditional and you’re good. Looks delicious.

It’s not anything I can think around traditional Italian dishes, so no big deal. Actually looks (and sounds from recipe) tasty. I could actually try it out on my own, except for cheese on fish-related meals. As an Italian I just can’t put cheese on fish (even tho lots of Italians do)

Looks delicious, actually very close to my own go to pasta dish! One question, how do you deal with long pasta in shallow water? Do you wait for half of the pasta to get soft and then sort of squeeze the rest in? If so, do they still come out evenly cooked? Definitely gonna try this

I’m Italian and 10/10 I would eat this, might be cooked by an italian too actually, not really the typical foreign pasta

Try with breadcrumbs instead of Parmesan. Anyway 10/10 I would eat it and I’m Italian as hell

Looks nice. Add some capers and olives and you have yourself a Puttanesca.
