  5. I have to tell you a funny. I watched this video and said to myself, “I’m going to make these”. I ordered a couple of 1/4 sheet pans as I have only 1.

    I’m a piano teacher and my student last night brought me a gift box of goodies and what was on top? This Rainbow cookie. I bet you his mom watched your video also!

  6. My son loves these, but cant have dyes or gluten, so I make them without food color and use gf flour. This video has been informative and I am sure the bars I make will be greatly inproved. I always thought these were little cakes, probably whynI could not get them just right. Thank you!

  7. These are very good BUT: next time I will use smaller trays because these were so thin they burnt 1” in all around- at the 12 minute mark! So watch out, if your trays are very thinly covered in batter, reduce the time by half!

  8. Definitely a labor of love. I was just in NY this weekend and grabbed a bag of these 🤩 one tip: grate the almond paste so it’s finer and incorporates well. I will be making these next week! I prefer the softer colors as you did John. Not crazy about all that food coloring.

  9. My friend makes these , but uses white chocolate for the top layer ,and sprinkles that with colorful jimmies, which I think looks pretty
