Maybe the best thing I ever ate: Spaghetti carbonara con ‘nduja

  1. Recipe:

    * 100g guanciale
    * 50g ‘nduja
    * 300g spaghetti
    * 5 egg yols
    * 60g pecorino
    * pepper

    ​

    1. Bake your guanciale, add your ‘nduja at the end
    2. Mix egg yolks with pecorino and black pepper
    3. Cook spaghetti in salted water
    4. Add spaghetti to guanciale pan
    5. Add a splash of pasta water to the egg mixture and stir in
    6. Take everything off the fire and add together while stirring constantly
    7. Serve with pecorino romano

    Why is there an egg yolk on top? Sounds delicious, but I really don‘t get the appeal of that egg yolk. It‘s not even tempered…

    To be fair to OP, he’s not claiming it’s a traditional carbonara. He’s done a proper carbonara but added an extra ingredient and called it something different. Fair play

    Saw this post this morning and thought it was a good idea, so i tried it. Three strong flavors: Pecorino romano, guanciale and nduja fighting for attention in one dish are too much of the good stuff
