Thoughts on the bruschetta I made?

    Those big chunks of tomato is not what I would like, if you’re honestly asking for thoughts. They fall off the bread and are … well … just chunks of tomato

    I prefer blanching and skinning the tomatoes. Then I make something like an Italian pico de gallo with red onion, basil and olive oil. I remove the seeds from the tomatoes and chop everything to around 2-mm cubes. Mix, add salt and black pepper. Done.

    My mom used to make bruschetta when I was younger. That stuff was amazing. I wish I knew her recipe … Sadly she passed away 🙁 she made the best food ever.. nothing better than the love of an Italian mother
