James is an excellent chef IMO. I did cook one of his recipe and it was literally mouth-watering. His reactions are also not only extremely informative but very fair and honest as well. Glad you two like each other's techniques! 😀
James reaction is more about food science. That's a lot of information about the science of risotto. You do the hows, he explains the whys.

The best risotto I've ever had was in Venice; just arborio rice cooked in very flavoursome, rich, fragrant stock.

I've had red wine risotto in Valpolicella and it was a waste of both the risotto and the Amarone.
