I’ve done this a couple times now, and it’s one of the seasons best comfort foods for me. Especially good when combine with smoked turkey or chicken sausages. To save a step or two, and most of the actual prep time, I’ve swapped in canned, or frozen squash. It opens the dish up to a few other varieties of squash, making it easier to choose a favorite. The taste is pretty comparable, and keeps it as a viable option off season. And finally, it makes this dish extra accessible for “short on time” week night meals.
